Method
- Combine dry.
- Combine wet.
- Add wet to dry.
- Add desired flavours (eg. frozen berries, chocolate, etc)
- Pour into muffin pattys
- Cook for 9 min at 180°C
- Rotate.
- Cook for further 9 minutes or until golden on top.
Notes
- Choc chip, and or mixed frozen berries are safe bets, but if using frozen berries beware that large pieces will extend cooking time. (ie, dont use big mango chunks, they'll prevent cooking through).
- Split the batter, add different flavours to each, and alternate spoonfuls into the pattys for a nice colour effect. Doing half taro and half lyche this way was a winner at work.
