Elita's Eggs

Ingredients
Method
- Start rice in rice cooker.
- Heat spring onion in a saucepan (reserving a sprinkle for later)
- Add 2 tbsp soy sauce, 2 tbsp soy sauce and 1 tbsp sambal, heating to combine.
- Add 1 tbsp of water to even out sauce. Adjust as needed.
- Crack eggs into sauce (trying not to break the yolks).
- Cover and cook until eggs cooked to liking.
- Serve eggs over rice, drizzle with remaining sauce, and sprinkle remaining spring onion.
Notes
- If you feel like a thicker sauce, use spring onion, garlic, shallot, green onion and chilli, stir frying with lots of oil, then put aside. Fry the eggs in the same pan, then serve eggs on rice and pour over sauce with a dash of sweet soy sauce.
