Darian's Pasta Sauce

Method
- Slice the tomatos, use a spoon to remove the seeds (without juicing the flesh).
- Slice the garlic cloves to small pieces.
- Heat a pan, add oil when hot, then add garlic with a sprinkle of salt.
- Meanwhile, start a large pot boiling with salted water for your pasta later.
- Once the garlic is lightly browned, add the tomao, then cover.
- Stir every ~5 minutes, repeating until the tomatos are mostly soft.
- Squish down with a spatula to get the right texture.
- After the tomatos are soft, tear up and add the torn up basil.
- Cook for another few minutes, then reduce.
- While reducing, cook your pasta.
- Add paste to sauce with a splash of pasta water, stir, and serve.
Notes
- Salting the garlic makes it sweat, helping to prevent it from burning.
- If using a steel pan, heat it until water bounces, then add the oil, reduce the heat, and let it coat to seal the cooking surface.
